Vegan Pizza

For the past few months, I have really enjoyed making new recipes! It has been so enjoyable to try new things and come up with new delicious favorites.

Last night, with our friends Bri and Travis, I made a Romesco Pizza with Caramelized Onions & Squash. It was delicious! Thanks to my friend Laura Watts, I found the recipe on this Vegan website. Though it did not have cheese or tomato sauce, the pizza was so creamy! We ended up purchasing a jar for $3 of Roasted Bell Peppers (instead of cooking them from scratch), so that saved some time. For the Pizza Crust, I used a Easy No Yeast-Pizza Dough recipe that worked great! To top of the pizza, we added avocado and/or mango slices on the side. I highly recommend it!

As a side dish, I made Carrots with Garlic & Basil. These were delicious as well!

Food inspiration

Recently, thanks to Brianna Whalen, I discovered this AMAZING cooking website. It is called Supercook. You can enter in all the ingredients you have in your kitchen, or all the ingredients you want to use to make something, and it will give you recipe options! Since we just got back from vacation, we didn't have many groceries last night, so here are the two recipes I found and made. They were DELICIOUS! I highly recommend this website for creative, fun recipes with what you have in your kitchen! Let us know what you come up with!

Finals--Pizza--The Desert Map--Hibernation Day

Finals

Keri and I just finished finals, and I wanted to share with you a story I wrote for our Hermeneutics (Greek for 'Interpretation') Final. It's called The Desert Map! (Keri made up a Memory Game!! But that you would have to see in person). Click the link below if you'd like to read it.
